It’s because people in hospitality get paid a wage they can actually survive on, unlike in the USA where tipping is vital. Before anyone jumps down my throat I’m not saying that it’s well-paid here, just that it’s better paid. Don’t believe me? If you’re in a job receiving tips in Wyoming, the minimum wage is US$2.13 and US$7.25 federally, as opposed to AU$14.31 (US$13.35) over here. Keep in mind this is priced into your meal though :)
I’ve got friends doing general pub work who get paid over AUD$20 an hour. In the UK I had mates who were assistant managers at pubs, and who were receiving under £7 an hour. That’s the equivalent of around AUD$14 when I was over there, now closer to AUD$10. I was shocked.
